Michelin-starred restaurant 8 1⁄2 Otto e Mezzo Bombana in Hong Kong and Michter’s Distillery, LLC have announced the special release of 8.5 year old Bombana Select Michter’s Bourbon produced exclusively for the restaurant.

Born of a longstanding friendship and mutual admiration between both teams, the bourbon represents a unique collaboration between chef Umberto Bombana and master distiller Willie Pratt.

Kentucky straight bourbon distilled from select American corn and then finished in special barrels chosen by Bombana and Pratt, the whiskey is ideal for enjoying neat or in cocktails. The bourbon has a bottling strength of 94.8 proof (47.4% alcohol by volume). Bombana and Pratt first selected bourbon aged for 8.5 years in new charred white American oak barrels. Then, the bourbon was moved for an additional aging period into specially designed barrels made from 18-month air-dried wood which had been toasted but not charred.

This very precise further maturation period imbued the whiskey with rich nutmeg, cinnamon, toffee and candied fruit notes with a gentle oak finish.
