From July 1 to August 31, The Ritz-Carlton, Hong Kong will present Meilleur Ouvrier de France (Best Artisan of France, Pastry Chef) and World Pastry Champion Franck Michel, who has crafted a summer afternoon tea set featuring seasonal tropical fruits exclusively for Café 103.

On the menu: Passion Choux filled with silky-smooth vanilla cream and tropical fruit compote, garnished with mango and passion fruit coulis; Heméra Frame a beautifully layered buttery shortbread; Almond Apricot Dome – a rich creamy almond mousse covered with crispy white chocolate coating; Sawayaka Verrine a delectable symphony of summery tastes – raspberry and melon soup with a Grand Marnier-infused parfait in a chocolate dome shell; Lili Melting Heart a half-sphere chocolate filled with tropical fruit caramel.
